I am crazy for coconut and if that is not apparent, Nasi Lemak was the first dish I cooked professionally with Madam Tan Nasi Lemak. Fast forward to 2024 – when I cooked with my friend Goo Goo at our four-hands dinner – she showed me how to make a silky creamy coconut curd. That inspired me to put this dinner together which uses coconut in all forms – from coconut water to coconut milk, grated coconut, and of course coconut gel aka nata de coco.
