This dinner is the result of a few things, my friendship with Terence Aw which began over a bowl of ba chor mee (cooked by him at his now defunct hawker stall), my love of local flavours and ice cream, and The Milky Way Cafe.
I used to make my own ice creams for Ownself Make Chef dinners, in a dinky little ice cream maker, which would take hours. Fast forward to 2019, Terence has mastered the art of gelato making at The Milky Way, churning (I couldn’t resist) out bespoke ice creams, gelato, and sorbets for Ownself Make Chef.
We have collaborated to bring you this dinner which features savoury pairings with various sorbets and ice creams #ownselfmake by Terence, as well as a NEW ice cream flavour (cashew!) for the French Toast Chicken Dessert.
Terence will also be showcasing his special creation of Fish Maw Noodles in this NINE course dinner.
Grilled Laksa Salad with coconut sorbet
Grilled baby cos lettuce, toasted grated coconut, fried shallots, cherry tomato confit, laksa leaf pesto, toasted cashew nuts dressed with lime laksa dressing, coconut sorbet
Tea smoked duck with Earl Grey tea ice cream
Tea smoked duck breasts, cooked until pink, served with red peppercorns, earl grey tea ice cream
Prawns, pork and crab fritter with salted egg yolk ice cream
Crispy deep fried spring roll of crab, pork and prawns. Served with salted egg yolk ice cream, grated salted egg yolk
Buah Keluak Pasta, pork with chocolate ice cream
South East Asia’s “truffle”, buah keluak is cooked with aromatics like blue ginger, lemongrass, turmeric, pork and prawns. Tossed through spaghetti, served with prawns and pork belly and that deliciously dark chocolate ice cream
Savoury pork Mille feuille, pistachio gelato, pork crackling, soy caramel
A savoury mille feuille of thinly sliced kurobuta pork belly, bechamel. Served with soy caramel and pistachio gelato
Nasi lemak cracker with lychee lime sorbet, ikan billis chilli
Fish maw noodles
Braised quail egg, fish maw, #ownselfmake fried pork meatball, shredded chicken, braised mushrooms with minced pork
Chng Tng Tart with Rum & Raisin Ice Cream
Longan and red date compote, gingko nuts in a baked flakey lard butter tart pastry, topped with brown sugar meringue. Served with rum & raisin ice cream
